Infopath form in SharePoint or syncing b/w outlook and sharepoint doc library.

Hi,

I have a business scenario where all communication happening thru emails amoung presales, sales, post sales and services groups as of today. 

For example: if someperson wants to know the quote for specific product with specific requirements. The pre sales guy forward the specifications to services team and they calculate quote, time , effort etc..and then get that reviewed by their managers and they submit the quote back to presales and then to sales etc....  the quotes are missing after sometime, reviewes are missing after sometime. so as a replacement they would want to move to sharepoint but still they want to use their email as primary mode of communication. 

So I can think of below approaches.

1. Using SharePoint incoming email receiving featureI can get the  oulook metadata fields and i should get the mail into temp folder and using timer job i should pull the attachment in the email and upload into SP-doc library but the issue here is , i don't know how the guy sends an email ( with or w/o subject,  with or w/o body ...but it wil have some attachement and even i don't know the naming convention of attachment too to get the meta data...) so how to push that attachment into document library ??  So i thought of giving infopath based solution that whenever the guy sends a mail they have to fill the form, that form should come as one of the outlook template . but this will be a costly as i need to create a outlook template and deploy it in MS exchange.....

so how to integrate sharepoint with outlook and the communication should go thru email and collabaration should be in sharepoint portal. 

Pls share your thoughts and any ideas.
