sharepoint foundation vs sharepoint server 2010

Hi, I am trying to figure out if there is a difference between foundation and server with respect to my application.  I have already done a ton of research so DO NOT POST A LINK.  I have seen them all.

We are deploying everything through code using web parts, page layouts, and master pages.  We are not allowing anyone to author anything on the site.  They won't use any SP functionality at all.  It doesn't look like a SP site at all.  We are using lists, but they are behind the scenes and no one will know about them.  Basically we have an asp site with a SP back end.

All pages are deployed from code although we do have publishing enabled.

Someone asked me if we even need publishing and I can't give a solid answer.  If I wanted to, could we still create content types and deploy via code?

It looks like all other benefits are worthless if no one can touch the SP admin pages.  We even completely hide site actions.

Another thing to mention is that pretty much all content in the site is pulled using code that accesses web services and sql server calls.  We are storing nothing at all in the pages.  We are using some lists for basic storage and access it via code, but could have used sql server.  Basically our pages are a bunch of web parts.  The webparts display info from other places not from SP.
